Fish Tacos Halibut is full of magnesium, which may prevent the develop of metabolic syndrome, a cluster of conditions which can lead to heart disease and type 2 diabetes. 1 pound flaky white fish like Pacific snapper 1/4 cup olive oil 1 lime, juiced 1 tablespoons chili powder 1 jalapeno chili, coarsely chopped 1/2 cup cilantro leaves 8 flour tortillas Preheat grill to medium high. Place fish in a medium size dish. Whisk together the oil, lime juice, chili powder, jalapeno, and cilantro. Pour over the fish and marinate for 15 to 20 minutes. Remove the fish from the marinade and place on hot grill. Grill for about 4 minutes and then flip for 30 seconds and remove. Let rest for 5 minutes and then flake with a fork. Place the flour tortillas on the grill for 20 seconds. Divide the fish among the tortillas and serve with salsa. Mango Avocado Salsa 1 ripe mango, cut into 1/2 inch dice 1 ripe avocado, cut into 1/2 inch dice 1/2 medium red onion, chopped fine 1 jalapeno chili, seeded and minced 3 tablespoons lime juice 2 tablespoons fresh cilantro Toss all ingredients with salt to taste. Chill for 2 hours and up to 24 hours |
