Soup is a great way to fill your stomach at the beginning of a meal, so you eat less calories throughout the rest of the meal. 2 tablespoons olive oil 2 large yellow onions, chopped 1/4 cup fresh ginger, finely chopped 5 cloves garlic, minced 7 cups chicken stock 1 cup white wine 1-1/2 pounds carrots, peeled & cut into 1/2-inch pieces 2 tablespoons lemon juice pinch of curry powder salt and pepper snipped fresh chives Heat olive oil in a heavy pot and add onion, ginger, and garlic and sauté for 20 minutes. Add the stock, wine, and carrots. Heat to boiling and simmer uncovered over mediium heat until carrots are tender, about 45 minutes. Purée the soup and season with lemon juice, curry powder, and salt and pepper. Sprinkle with chives. Adapted from Silver Palate Good Times. |
