Salad of Avocado, Oranges, Mache, and Spiced Walnuts Avocados contain cholesterol-lowering sterols and the fat in avocados helps to absorb other nutrients. Walnuts fight cancer, reduce LDL cholesterol, and increase HDL, contain antioxidants, anti-inflammatory agents, and also arginine, an agent which relaxes the arteries, reducing the risk of blockages. 1/3 cup Meyer lemon juice 1 large shallot, minced 1 teaspoon salt 1/2 cup olive oil 1/2 cup walnut oil Mix lemon juice, shallot, and salt. Let marinate for 10 minutes. Whisk in olive oil and walnut oil. 1 tablespoon olive oil 2 cups walnuts 2 tablespoon honey 1/2 teaspoon sweet paprika Heat olive oil in sauté pan. Add walnuts, honey, paprika, and cook over medium heat until the walnuts are toasted and coated with the sauce. Add salt to taste. Cool on plate. 2 avocados, peeled and sliced into 1/4-inch slices 4 oranges, sectioned 8 ounces of mache, cleaned and dried Place mache in a large salad bowl and drizzle with 1 tablespoon of dressing at a time and toss until lightly coated. Top with avocados, oranges, and walnuts. |
